Making life easier with meal prep

Anyone else have a problem with eating healthy when it comes to lunch, or is it just me? I eat a fairly healthy breakfast and dinner, but come lunch time I fall apart and just sort of forget how to eat like an adult. I’ve been known to eat cupcakes, candy, fast food, and sometimes just skip it all together and walk around hangry. I’ve made a bunch of excuses for my actions. I get busy with work, household stuff, taking care of my guys and my Klaus, exercise, blog work, etc. I’m not kidding. I will literally walk 5+ miles then convince myself I just don’t have the time to eat healthy and then go grab some fast food. Because that makes total sense! But for me time really is an issue. No matter how early I wake up there never seems to be enough time in the day. Even now that I work from home I feel like I have even LESS time to get everything done. Go figure!

So I had to find a way to keep myself on track. I tried doing the mason jar salad thing. No matter how many jars I filled up I still had waste. No one else here eats salad so whatever didn’t fit in the jars just went to waste. Also, I don’t care for salad! There! I said it! Once in a while I will make a salad so good that I ask myself why I don’t eat salad more often. Then the next day rolls around and I tell myself it’s salad time and then I realize I just don’t want it! The very thought of it makes me sad. I don’t know what it is. It’s not that I’m bored of it. I eat the same breakfast almost every single morning and never grow tired of it. I guess I’m just not a salad person?

Then I stumbled upon some pretty impressive meal prep photos on Instagram. That seemed like something I could do! And you know what? It really does help me to stay on track! It’s probably the easiest thing ever! Come Monday I spend a part of my morning cooking and prepping lunch for the week. Then I use an ice cream scoop to evenly distribute the food throughout my containers. I set one container aside for that day, I place another container in the fridge for the following day, and the rest in the freezer. At night I take my lunch out of the freezer and let it thaw out in the fridge overnight and then heat it up the following day. My lunch is ready in a few minutes! It seriously does not get easier than that! This method is especially going to come in handy during the summer when my son is home from school. Because do you know what’s worse than trying to prepare a healthy lunch every day? Trying to prepare TWO healthy lunches every day! This way we will have more time to go hiking and exploring.

One of my favorite combos is pictured above. Ground chicken sausage, mashed purple sweet potatoes, and sautéed kale with shallots. Another quick and easy lunch is chicken or turkey meatloaf, broccoli mash, and carrots. I also saw these super cute noodle cups that I want to try out. I’m betting my son will appreciate that more than anything!

Like I mentioned before, my breakfast is the same every day. Non-fat yogurt with granola and fresh fruit. Sometimes I switch it up and will do overnight oats with fresh fruit. Sunday brunch I get a little fancy and do shredded sweet potatoes with egg or avocado with egg.

As for the snack or backup meal, smoothie packs are a lifesaver! I chop up a bunch of fruit and vegetables and place them in freezer bags. When I’m ready for a smoothie I empty the smoothie pack into my Vitamix along with some non-dairy milk (lite soy, oat, rice) and non-fat yogurt. Easy, right? Not only is it easy, but it also cuts back on waste because everything fits in the freezer bags.

I don’t really meal prep for dinner, but I might give that a go. Because it really is a time saver and it totally helps keep me on track. I only wish I had done this sooner! Also, I might need a bigger freezer!

Alpha Girl Beauty Powder

This post took a little longer to put together than I wanted. If you follow me on Instagram you know that my first Alpha Girl Beauty Powder arrived damaged. MAC shipped a replacement out rather quickly, but then I got caught up with other goodies and this post just got pushed back. Better late than never, eh?

I really wanted the lipsticks more than anything. And I think I picked some good ones! I was originally just going to get Reel Sexy, but decided to pick up Make Me Gorgeous and Real Doll as well. After seeing swatches I convinced myself that I needed them in my life.

Let’s start with the Alpha Girl Beauty Powder. It’s described as a soft peachy pink with gold nuance. I applied it to my cheeks as a blush because I thought it would add a nice little glow. I really like it paired with the Reel Sexy Lipstick.

As for the lipsticks, Make Me Gorgeous is an amplified and described as an intense coral pink, Real Doll is a lustre and described as a light pinky lilac, and Reel Sexy is an amplified and described as a bright coral. At this point I don’t think I can pick a favorite. I love them all! And for a lustre I’m really surprised at how Real Doll applied. It really does look like the perfect lilac! You can see them in action below.
