Zucchini crisps

Every time I try a recipe I find on Pinterest I think of these types of posts. I may have laughed a little too hard at some of those. It happens though. Thankfully that didn’t happen to me today. Because a) I really wanted to try these zucchini crisps since the day I pinned them and b) I was starving!

Today I tried the Zucchini Parmesan Crisps from Damn Delicious. It’s an easy recipe to whip up. I made a few changes though. I used light soy milk in place of the egg. I also seasoned the flour with a little salt and pepper. Then I added some Italian seasoning, garlic and onion powder to the panko and parmesan. Oh, I cut the recipe in half and added 2 tbsp parmesan instead of 1/4 cup. Ok I guess you could say that I butchered the recipe. I’m sure it was fine as is. I do things differently is all.

I wouldn’t exactly say that these are healthy because they are fried. But that didn’t stop me from eating like half of the zucchini myself. These are AMAZING! I served them with a vegan ranch dip that I quickly whipped up. Here’s a closer look…

Believe me when I tell you that these are amazing! Both my husband and son loved them! And my husband HATES veggies! This is good stuff!

  1. Oh my word, these look delicious! I love zucchini! Every time we make fried zucchini or squash we have to buy several of each because I eat way too much. Oops.

    • I’ve fried quite a few things, but never zucchini. I never really knew what to do with it aside from tossing it in a pasta dish or salad. It’s so good this way! I can see how you’d have to buy several. I just bought 3 today lol.

  3. My husband’s aunt just gave us a zucchini on Tuesday and I have been wondering what to do with it so this recipe is PERFECT! I personally would do it the same way as you as in I will always put seasoning and herbs in my breading. Thank you for this brilliant idea!

    • I remember I was given a buttload of zucchini a while back and had NO idea what to do with it. I think I just made zucchini bread. If only I knew back then what I know now… Enjoy! I’m planning to make more tomorrow. :)

  7. ohemgeeee those look amazing! I have to try them. I just hate frying but ahh i’ll do it for these, lol.

    • I know! I’m going to try an experiment a bit. I’ve seen some baked zucchini crisps, but they look pretty dry and horrible to be honest. I’ll see what I can do to maybe make them look more appetizing lol.
